Matt Dolnik joined the New France team in April 2026. He spent most of his life in Wisconsin, where he grew up immersed in the hospitality industry, holding roles ranging from busser to bartender. Matt attended the University of Wisconsin–Stout, earning a degree in Hospitality Management and building a strong foundation for his career in hospitality.

Matt moved to the Twin Cities in 2018, where he continued his hospitality career working with a hotel management company focused on premier service and guest satisfaction. Leading up to his time at New France, Matt focused on developing his career around exceptional customer service through humility and genuine connection, while also expanding his knowledge of wine and spirits. He is excited to continue this growth throughout his career with New France.

Outside of work, Matt enjoys staying active in all seasons. He plays volleyball (both indoor and outdoor) and is an avid snowboarder. He also loves enjoying food, music, wine, cocktails, and time outdoors with his partner, Laurel.
